All the sounds in the game can be found in the Sound.dsres for DS1 or Sound1.ds2res for DS2 located in the resources folder of each game.
Simply untank them like any resource tank with Tank Viewer or the Toolkit. All the sound effects are already in wav format and are found in sound/effects folder for DS1 and sound/environmental/sub-folders for DS2.
The wav files are at 352kbps which may or may not be suitable for what you want. Certainly when using sounds from other sources in DS2 I've often had to convert them to the right format (even if they were already wav files). There are a number of programs available on the net for this but one I've used is Switch Sound File Converter, which is free to use for non-commercial use (the program asks you to confirm this everytime it starts). It can be downloaded from here http://www.nch.com.au/switch/support.html and seems to work fine in Windows 10.
